Vegan Vanilla Chia & Belgian Dark Chocolate Ganache Cake

We use chia seeds as our vegan superfood in this vanilla cake. Chia when soaked in water not only creates this amazing gel like structure to replace eggs, but also gives the baked good plenty of moisture as well as amazing nutrition. This beautiful vanilla sponge is layered with our vegan callebaut belgian dark chocolate ganache ( contains no added sugar) to give us the perfect heavenly bite of vanilla and chocolate.
